What’s your favorite salad dressing?
Mine is actually Thousand Island. If my meal at a restaurant comes with a salad, and the waitress asks what type of dressing I want, one hundred out of one hundred times, my answer is Thousand Island dressing.
However, as an everyday dressing at home, I prefer something a bit lighter and healthier, and this oil-based Zesty Italian Dressing totally fits the bill. If you’re only going to to go to the effort to make one homemade dressing to have in the fridge at all times, this is it.
For whatever reason, Italian dressing seems to be a pretty much mutually agreed upon dressing, don’t you think? While it might not be everyone’s absolute favorite (because hello, creamy Thousand Island and Ranch still exist in the world), but I’ve never met someone who doesn’t like a good zesty Italian dressing.
It tastes great and goes well with pretty much any vegetables. Not to mention that it makes a mean chicken or fish marinade for a very easy dinner.
Now maybe you’re thinking, sure, my family likes Italian dressing, but why bother to make it from scratch? I used to think the exact same thing myself, but trust me, this homemade version tastes better than anything you can buy in the store.
Plus, did you know that most of the Italian dressings on the supermarket shelf are actually sweetened with sugar? But here’s the thing, Italian dressing doesn’t need sugar. Trust me. I’ve taste-tested and nope, not necessary.
This recipe for Zesty Italian Dressing is full of flavor thanks to a few key spices, a bit of minced garlic, and some freshly grated cheese (optional but delicious). No sugar needed.

- ¾ cup olive oil
- ¼ cup red wine vinegar
- 1 large garlic clove, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoons freshly grated parmesan or pecorino romano cheese (optional)
- Add all ingredients to small mixing bowl, and whisk well. Or, add all ingredients to a mason jar, replace lid, and shake well.
